Healthy, quick, and easy tomato basil soup made with fresh ingredients and perfect for a comforting vegan meal.
Ingredients
1 tablespoon olive oil or 1/4 cup water
1 large white onion, sliced
6 cloves garlic, minced
2 1/2 lbs tomatoes
1/2 cup basil leaves
1/2 teaspoon dried oregano
2 cups vegetable broth
salt and pepper to taste
vegan cream optional
Instructions
1. Prep ingredients by slicing onion and cutting tomatoes
2. Heat oil and sauté onion for 7 minutes
3. Add garlic and cook for 1 minute
4. Add tomatoes, basil, oregano, broth, salt, and pepper
5. Simmer for 15 minutes
6. Cool slightly and blend until smooth
7. Adjust seasoning and serve
Notes
Add vegan cream for richness
Adjust salt to enhance flavor
Store leftovers in fridge up to 6 days
