Ingredients
1 1/2 lbs boneless skinless chicken breasts or thighs sliced
2 tablespoons olive oil
2 tablespoons fresh lime juice
2 teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper optional
3 bell peppers sliced
1 large red onion sliced
1 tablespoon olive oil for vegetables
8 to 10 small tortillas
1 avocado sliced
1/2 cup shredded cheese
1/4 cup fresh cilantro chopped
1 lime cut into wedges
Instructions
1. Preheat oven to 400°F (200°C)
2. Slice chicken and vegetables
3. Mix olive oil, lime juice, and spices
4. Coat chicken with marinade and rest 15–30 minutes
5. Season vegetables
6. Spread everything on sheet pan
7. Bake for 20–25 minutes
8. Broil for 3–5 minutes
9. Warm tortillas
10. Serve with toppings
