Description
These crispy russet potato recipes work in both the air fryer and oven. The potatoes turn golden outside and fluffy inside with simple pantry seasonings, making them perfect for weeknight dinners, burgers, chicken, breakfast plates, or cozy family meals.
Ingredients
2 large russet potatoes, scrubbed and dried
1 1/2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
2 tablespoons grated parmesan, optional
Ranch, ketchup, garlic aioli, or sour cream for serving
Instructions
1. Cut the russet potatoes into wedges or 3/4-inch cubes. Keep the pieces similar in size so they cook evenly.
2. Place the cut potatoes in a bowl of cold water for 20 minutes. This removes extra surface starch and helps the potatoes crisp.
3. Drain the potatoes and dry them very well with a clean kitchen towel or paper towels.
4. Add the potatoes to a large bowl. Drizzle with olive oil, then add garlic powder, smoked paprika, onion powder, salt, and black pepper. Toss until every piece gets coated.
5. For the air fryer method, preheat the air fryer to 400°F. Arrange the potatoes in a single layer and cook for 18 to 22 minutes, shaking the basket halfway through.
6. For the oven method, preheat the oven to 425°F. Spread the potatoes on a parchment-lined baking sheet and bake for 30 to 40 minutes, flipping halfway through.
7. Remove the potatoes when they look golden and crisp on the edges. Sprinkle with parsley and parmesan, if using.
8. Serve hot with ranch, ketchup, garlic aioli, sour cream, or your favorite dipping sauce.
Notes
For extra crisp potatoes, do not skip the soaking and drying steps.
Avoid overcrowding the air fryer basket or baking sheet.
Use avocado oil instead of olive oil if you prefer high-heat cooking oil.
Add cayenne pepper for a spicy version.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in the air fryer at 375°F for 4 to 6 minutes or in the oven at 400°F until hot and crisp.
