A creamy, tangy, smoky Mexican Street Corn Salad perfect for BBQs.
Ingredients

6–8 ears fresh corn
2 Tbsp butter
1 Tbsp olive oil
1/2 cup mayonnaise
4 Tbsp lime juice
1 tsp salt
1/2 tsp lemon pepper
1/2 tsp smoked paprika
1/4 tsp ground cumin
3 cloves garlic
1 cup queso fresco
1 jalapeno
1 small red onion
1/4 cup cilantro
Instructions
1. Heat grill to medium.
2. Brush corn with butter and oil.
3. Grill corn until charred, turning often.
4. Cut kernels off the cob.
5. Mix dressing ingredients in a bowl.
6. Combine corn with dressing and remaining ingredients.
7. Serve immediately or chill.
Notes
Use fresh lime juice for best flavor.
Adjust spice level to taste.
Serve warm or chilled.
