Lasagna Soup is a rich, cheesy, and comforting one-pot meal packed with beef, pasta, and bold tomato flavors.
Ingredients
1 tbsp olive oil
1 medium onion diced
3–4 cloves garlic minced
1 lb lean ground beef
1.5 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
1 tbsp tomato paste
4 cups beef broth
24 oz marinara sauce
14.5 oz diced tomatoes
1/4 cup water
10 oz lasagna noodles
1.5 cups cottage cheese
1/2 cup parmesan
1/2 cup mozzarella
1 cup spinach
Instructions
1. Heat oil and sauté onion and garlic
2. Add ground beef and cook until browned
3. Stir in seasonings and tomato paste
4. Add broth, marinara, tomatoes, and water
5. Add broken lasagna noodles and simmer
6. Cook until noodles are tender
7. Stir in cheese and spinach
8. Serve with toppings
Notes
Add extra broth when reheating
Use fresh cheese for best texture
