Moist and flavorful hummingbird cake recipe with bananas, pineapple, and cream cheese frosting.
Ingredients
3 cups all purpose flour
2 cups granulated sugar
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 eggs
1 1/4 cup vegetable oil
2 tsp vanilla extract
8 oz crushed pineapple
1 3/4 cup mashed bananas
1 cup pecans
1 cup butter
8 oz cream cheese
3 1/2 cups confectioner’s sugar
2 tsp pineapple juice
2 tsp vanilla extract
Instructions
1. Preheat oven to 350°F and prepare pans
2. Mix dry ingredients together
3. Add wet ingredients and combine
4. Divide batter and bake 24-30 minutes
5. Cool completely before frosting
6. Beat butter and cream cheese
7. Add sugar and whip until fluffy
8. Add vanilla and pineapple juice
9. Layer and frost cake
Notes
Use ripe bananas for best flavor
Do not overmix batter
