Ingredients
500g white beans
3 celery sticks
3 carrots
1 brown onion
1 red onion
5 garlic cloves
1 tbsp tomato paste
1 cup olive oil
400g crushed tomatoes
1 tsp oregano
1/2 tbsp salt
1/2 tsp pepper
3 bay leaves
Instructions
1. Soak beans for 12 hours
2. Boil beans for 10 minutes and drain
3. Saute onions and garlic
4. Add tomato paste, carrots, celery
5. Add beans, tomatoes, spices, water
6. Simmer for 1.5 hours
7. Add olive oil and salt
8. Simmer 10 more minutes

Use quality olive oil
Do not skip soaking beans
