Ingredients
3 pounds bone-in chicken pieces
2 cups buttermilk
1 tablespoon hot sauce
2 teaspoons salt
1 teaspoon black pepper
2 cups flour
1/2 cup cornstarch
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
Oil for frying
Instructions
1. Mix buttermilk, hot sauce, salt, and pepper.
2. Marinate chicken at least 4 hours.
3. Whisk flour, cornstarch, and seasonings.
4. Coat chicken thoroughly.
5. Rest coated chicken 15 minutes.
6. Heat oil to 325°F–350°F.
7. Fry chicken until golden brown and 165°F internally.
8. Rest on wire rack before serving.
Notes
Use a thermometer for accurate frying.
Do not overcrowd the pan.
