Ingredients
1 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup sugar
Pinch of salt
3 tbsp cornstarch
4 tbsp butter
5 egg yolks
1/2 tsp vanilla extract
1 1/3 cups all-purpose flour
1/2 cup confectioners sugar
1/4 tsp salt
1/2 cup unsalted butter
1 egg
Assorted fresh fruits (berries, kiwi, peaches, mango)
Instructions
1. Heat milk, cream, and half the sugar until simmering
2. Whisk egg yolks, sugar, and cornstarch until smooth
3. Temper eggs with warm milk, then cook until thick
4. Stir in butter and vanilla, then chill pastry cream
5. Prepare tart crust, chill, and bake until golden
6. Fill crust with pastry cream
7. Arrange fresh fruits and glaze before serving

Chill pastry cream completely before assembling
Serve the tart the same day for best texture
