Description
Flavorful Mexican chicken and rice is a one-pot dish packed with bold spices, tender chicken, and perfectly cooked rice.
Ingredients
4 boneless chicken breasts
1 cup long-grain rice
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 onion
3 garlic cloves
2 tsp cumin
2 tsp chili powder
Salt and pepper
2 tbsp olive oil
2 cups chicken broth
Instructions
1. Chop vegetables and mince garlic
2. Season and sear chicken until golden
3. Remove chicken and sauté onion and garlic
4. Add peppers and cook briefly
5. Return chicken and add rice and broth
6. Bring to boil then simmer covered for 20 minutes
7. Fluff rice and serve
Notes
Use fresh ingredients for best flavor
Do not open lid while rice cooks
Add lime juice before serving for brightness
