Easy rhubarb crumble with buttery topping and tangy fruit filling, perfect for a quick dessert.
Ingredients
Scale
100 g plain flour
115 g butter softened
75 g soft brown sugar
50 g rolled oats
700 g rhubarb
3 tbsp sugar
Instructions
1. Preheat oven to 190C/170 fan
2. Chop rhubarb and cook with sugar for 5 minutes
3. Rub butter and flour into breadcrumb texture
4. Add oats and sugar and mix well
5. Layer rhubarb in dish and add crumble topping
6. Bake for 35-40 minutes until golden
7. Serve warm with custard or ice cream
Notes
Use fresh rhubarb for best flavor
Do not overmix crumble topping
