A creamy and comforting soup inspired by Panera’s famous Broccoli Cheddar Soup. This easy-to-follow recipe brings the rich, velvety flavor of cheddar cheese, fresh broccoli, and carrots together in a smooth, delicious broth.
Ingredients
4 cups broccoli florets (fresh or frozen), chopped small
1 cup carrots, shredded or julienned
1 small yellow onion, diced
4 tbsp butter
1/4 cup all-purpose flour (for roux)
3 cups chicken or vegetable broth
2 cups milk or heavy cream (whole milk for lighter version, cream for richness)
2 cups sharp cheddar cheese, grated (freshly grated for best texture)
Salt and black pepper to taste
1/2 tsp mustard powder (optional)
1/2 tsp paprika (optional)
Instructions
1. Make the Roux: In a large pot, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes until the mixture forms a golden roux.
2. Add Liquids: Slowly whisk in the chicken broth, followed by the milk or cream. Continue whisking until the mixture is smooth and thickened (3–4 minutes).
3. Add Vegetables: Stir in the diced onion, shredded carrots, and broccoli florets. Lower the heat and let the soup simmer for 15–20 minutes, until the vegetables are tender.
4. Incorporate Cheese: Remove the pot from heat. Gradually stir in the shredded cheddar cheese until fully melted and the soup is smooth.
5. Season: Taste and adjust seasoning with salt, black pepper, mustard powder, and paprika. Serve hot in bowls or, for an authentic Panera experience, in bread bowls.
Notes
For the best texture, use freshly grated cheddar cheese. Pre-grated cheese can cause a grainy texture in the soup.
Make it vegan by using plant-based butter, vegan cheese, and plant-based milk (like almond milk).
To freeze: Let the soup cool completely before transferring to an airtight container. It can be stored in the freezer for up to 3 months. Reheat on low heat, adding a bit of milk or broth to adjust the consistency.
