Description
A rich and comforting creamy chicken soup made with tender chicken, vegetables, pasta, and parmesan cheese.
Ingredients
1 teaspoon olive oil
1–1.5 pounds chicken
2 teaspoons Italian seasoning
Salt and pepper
1/2 cup carrots
1/2 cup celery
1/2 cup onions
1/4 cup sun-dried tomatoes
3 garlic cloves
1/4 cup flour
2 tablespoons tomato paste
6–8 cups chicken broth
6 oz pasta
1 cup heavy cream
1/2–1 cup parmesan cheese
2.5–3 cups spinach
Instructions
1. Heat oil and cook chicken with seasoning until browned
2. Add vegetables and cook until soft
3. Stir in flour and tomato paste
4. Whisk in chicken broth slowly
5. Add pasta and simmer until cooked
6. Stir in cream, spinach, and cheese
7. Adjust seasoning and serve
Notes
Use fresh parmesan for best flavor
Add broth if soup thickens
Cook pasta separately if storing
