Homemade copycat Nutter Butter sandwich cookies with creamy peanut butter filling.
Ingredients
1 cup butter
1 cup granulated sugar
1 cup brown sugar
1 cup peanut butter
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup peanut butter for filling
1 cup powdered sugar
1/4 cup butter softened
1 teaspoon vanilla extract
Instructions
1. Cream butter and sugars until fluffy
2. Add peanut butter eggs and vanilla
3. Whisk dry ingredients separately
4. Combine wet and dry mixtures
5. Shape dough into peanut shapes
6. Bake at 350 degrees for 10 to 12 minutes
7. Prepare peanut butter filling
8. Assemble sandwich cookies

Cool cookies before filling
Store in airtight container
