Ingredients
2 cups all purpose flour
2 cups sugar
3 cups finely grated carrots
4 large eggs
1 1/3 cup vegetable oil
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1 tablespoon vanilla extract
1/4 teaspoon salt
16 ounces cream cheese
1/2 cup unsalted butter
1 cup powdered sugar
1 cup toasted walnuts
Instructions
1. Preheat oven to 350°F
2. Mix all dry ingredients in a large bowl
3. Add oil and vanilla and mix well
4. Beat in eggs one at a time
5. Fold in finely grated carrots
6. Divide batter into greased pans
7. Bake for 30-35 minutes until done
8. Cool cakes completely
9. Prepare cream cheese frosting
10. Assemble and frost cake evenly
11. Top with toasted walnuts and serve
