Description
This easy one-pan chicken dinner combines juicy seasoned chicken, fluffy rice, garlic, onion, and savory broth for the ultimate comfort meal.
Ingredients
1½ pounds boneless chicken thighs or breasts
1½ cups long-grain white rice
3 cups chicken broth
1 small onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and black pepper to taste
2 tablespoons chopped parsley
1 tablespoon lemon juice optional
Instructions
1. Season the chicken with salt, pepper, paprika, garlic powder, and Italian seasoning.
2. Heat olive oil in a large skillet over medium-high heat.
3. Sear the chicken until golden brown on both sides, then remove from the skillet.
4. Add onion and garlic to the skillet and sauté until fragrant.
5. Stir in the rinsed rice and toast for 1 minute.
6. Pour in chicken broth and scrape the bottom of the pan.
7. Return chicken to the skillet and cover tightly.
8. Reduce heat and simmer for 18 to 22 minutes until rice becomes tender.
9. Let the dish rest for 5 minutes before fluffing the rice.
10. Garnish with parsley and lemon juice before serving.
Notes
Rinse the rice before cooking for fluffier texture.
Use chicken thighs for extra juicy results.
Add peas or carrots for more vegetables.
Store leftovers in the refrigerator for up to 4 days.
