Ingredients
2 lbs russet potatoes peeled and chopped
2 tablespoons kosher salt divided
4 tablespoons butter unsalted
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
1 cup queso fresco crumbled
1 cup vegetable oil
16 corn tortillas
1 lb roma tomatoes
2 cloves garlic
1 tsp cumin
1 tsp oregano
1 tsp black pepper
1/2 tsp salt
1 tbsp vegetable oil
Instructions
1. Boil potatoes in salted water until fork tender about 15 minutes
2. Boil tomatoes for 10 minutes then blend with garlic and spices
3. Simmer sauce with oil and reserved water until thickened
4. Mash potatoes with butter spices and queso fresco
5. Warm tortillas until soft and pliable
6. Fill tortillas with mashed potatoes and fold
7. Heat oil and fry tacos until golden and crispy
8. Drain on paper towels and serve with sauce and toppings
Notes
Do not overfill tacos to prevent breaking
Keep oil hot for crispy texture
