Ingredients

1 cup instant oats

¾ cup whole wheat flour or gluten-free flour

1 ½ tsp baking powder

1 ½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

2 tbsp coconut oil or unsalted butter, melted

1 large egg

1 tsp vanilla extract

½ cup pure maple syrup

1 cup freshly grated zucchini, patted dry


Instructions

1. Whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.

2. Whisk coconut oil or butter, egg, and vanilla.

3. Stir in maple syrup.

4. Combine wet and dry ingredients.

5. Fold in zucchini.

6. Chill dough for 30 minutes.

7. Preheat oven to 325°F and line baking sheet.

8. Scoop into 15 portions and flatten.

9. Bake 11–14 minutes.

10. Cool 10 minutes before transferring.

Notes

Pat zucchini dry before mixing.

Do not overmix dough.

Use gluten-free flour and oats if needed.
