Description
Zucchini and Ground Beef Skillet is a quick healthy low carb dinner made in one pan with simple fresh ingredients.
Ingredients
1 lb lean ground beef (80% lean) 2 medium zucchinis 1 bell pepper (any color) 3 cloves garlic 1 medium onion 2 tbsp extra virgin olive oil Salt and pepper to taste
Instructions
1. Wash and chop the zucchini into half-moons; dice the bell pepper and onion. 2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic and diced onion for 2–3 minutes. 3. Add ground beef and cook until browned (5–7 minutes), breaking it apart. 4. Stir in diced bell pepper and zucchini; sauté 5–6 minutes until tender yet crisp. 5. Season with salt and pepper. Serve warm.
Notes
Use lean ground beef to reduce excess grease. Do not overcook zucchini to maintain texture. Store leftovers in airtight container up to 4 days.
