A creamy, dairy-free Whole30 Marry Me Chicken Soup packed with flavor and ready in just 30 minutes.
Ingredients
2 tbsp vegan butter or olive oil
1 onion diced
1 tbsp garlic
2 tsp garlic salt
1.5 tsp oregano
1 tsp thyme
0.5 tsp paprika
0.5 tsp red pepper flakes
1.5 lbs chicken breast
5 cups chicken broth
1 can tomato paste
1 can diced tomatoes
1 jar sun-dried tomatoes
1/4 cup nutritional yeast
1.5 cups coconut cream
1.5 cups cauliflower rice
2 cups spinach
Fresh basil
Instructions
1. Heat oil and sauté onion
2. Add garlic and spices
3. Add chicken, broth, tomatoes, and yeast
4. Cook on stove or Instant Pot
5. Blend cauliflower with cream and broth
6. Shred chicken and return to pot
7. Add spinach and simmer
8. Serve with basil
Notes
Use chicken thighs for richer flavor
Adjust spice to taste
