Description
This Whole Roasted Cauliflower is crispy on the outside, buttery and tender inside. It’s the perfect healthy vegetarian main or side dish that looks as good as it tastes.
Ingredients
1 medium head cauliflower
1/4 cup olive oil
1/4 cup parmesan cheese, grated
3 tablespoons butter, melted
3 garlic cloves, grated
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon ground black pepper
Instructions
1. Preheat oven to 400°F (200°C).
2. Trim leaves and stem so cauliflower sits flat, keeping head intact.
3. Dry cauliflower completely.
4. Mix butter, olive oil, garlic, and spices.
5. Brush mixture over cauliflower thoroughly.
6. Place in baking dish and pour excess around base.
7. Roast for 45–55 minutes until golden and tender.
8. Broil 3–4 minutes for crispier crust, optional.
9. Slice and serve hot with optional garnish.
Notes
Make sure the cauliflower is fully dry before roasting.
Baste halfway through for extra moisture and flavor.
Great with tahini sauce or herbed yogurt on the side.
