Description
A hearty white bean and sausage stew inspired by Louisiana flavors, rich, comforting, and easy to make.
Ingredients
1 pound smoked turkey sausage sliced
2 cans white beans drained and rinsed
1 medium onion chopped
2 cloves garlic minced
1 tablespoon olive oil
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
2 cups cooked white rice
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat
2. Add sausage and cook until browned for 5-7 minutes then set aside
3. Sauté onion and garlic until translucent
4. Return sausage to the pot
5. Add beans broth thyme parsley salt and pepper
6. Bring to a boil then reduce heat
7. Simmer for 20-25 minutes until thickened
8. Serve over rice and garnish with parsley
Notes
Use andouille sausage for more spice
Mash some beans for thicker texture
Store leftovers up to 3 days in fridge
