Tori Chili Recipe – Amazing Japanese Spicy Chicken in 3 Steps

Description

Tori Chili is a comforting Japanese-style spicy chicken dish stir-fried in toban djan chili paste with garlic, ginger, and sweet-savory sauce. Paired with soft scrambled eggs and served over rice, it’s the perfect balance of heat and richness for a cozy dinner.


Ingredients

▢300 g chicken breast

▢1 pinch salt

▢1 pinch ground white pepper

▢½ tbsp sake

▢1 egg white

▢1 tbsp potato starch (katakuriko)

▢½ tbsp cooking oil

▢3 tbsp water

▢½ tbsp light brown sugar

▢2 tbsp tomato ketchup

▢1 tbsp sake

▢1 tsp Chinese-style chicken bouillon powder

▢½ tsp dashi granules

▢½ Japanese leek, finely diced

▢3 garlic cloves, finely diced

▢1 tbsp ginger root, finely diced

▢½ tbsp chili bean sauce (toban djan)

▢1 tsp lemon juice

▢1 tsp toasted sesame oil

▢½ tbsp chili oil

▢2 tbsp green peas

▢½ tbsp butter

▢1 egg

▢1 egg yolk

▢salt and pepper to taste

▢green onions for garnish


Instructions

1. Cut chicken breast and marinate with salt, pepper, sake.
2. Add egg white, mix well, then coat with katakuriko and oil. Set aside.
3. Mix sauce: water, brown sugar, ketchup, sake, bouillon, and dashi.
4. Fry chicken in oil until golden and cooked through. Remove and set aside.
5. In the same pan, fry leek, garlic, ginger until fragrant.
6. Add toban djan, stir for 1 minute, then pour in sauce.
7. Simmer until bubbling. Add chicken back in, with lemon juice, sesame oil, chili oil, and peas.
8. Cook until thick and glossy. Remove from heat.
9. In another pan, scramble egg + yolk with butter until soft. Season.
10. Serve Tori Chili with eggs and garnish with green onion.

Notes

Best served with white rice.

You can substitute chicken thighs for a juicier option.

Adjust chili oil to your spice preference.
