Ingredients
1 pound tomatoes
Sea salt and black pepper
4 ounces goat cheese
1/4 cup parmesan cheese
3 sprigs thyme
1/4 cup basil
1 pie crust
1 egg
Parchment paper
Instructions
1. Bring goat cheese to room temperature
2. Slice tomatoes and rest 10-15 minutes
3. Roll out pie crust on parchment
4. Spread goat cheese leaving border
5. Add parmesan and tomatoes
6. Season and fold edges
7. Brush with egg wash and add thyme
8. Bake at 400°F for 35-40 minutes
9. Rest 15-20 minutes and garnish with basil
