Ingredients
4 large russet potatoes (peeled and diced)
1 large onion (chopped)
2 cloves of garlic (minced)
4 tbsp unsalted butter
3 tbsp all-purpose flour
4 cups chicken or vegetable broth
1 cup whole milk or heavy cream
Salt and black pepper to taste
Optional: fresh thyme or rosemary
Instructions
1. Melt butter in a large pot over medium heat. Sauté chopped onion until translucent (5 min), then add garlic (1 min).
2. Sprinkle in flour to form a roux, stirring constantly for 2 minutes.
3. Gradually whisk in broth, scraping the bottom of the pot. Add diced potatoes. Bring to boil, then reduce heat and simmer for 15–20 minutes.
4. Blend soup using immersion blender (partially or fully).
5. Stir in milk or cream. Heat on low for 5 more minutes.
6. Season with salt, pepper, and optional herbs.
7. Serve with garnishes like cheese, bacon, or chives.
Notes
For extra texture, blend only half the soup.
To freeze, skip adding cream—add it fresh during reheating.
