1 tablespoon olive oil 1 ½ pounds boneless, skinless chicken breasts Kosher salt and black pepper 3 cloves garlic, minced 1 red bell pepper, diced 1 onion, diced 3 tablespoons red curry paste 1 tablespoon grated ginger 6 cups low sodium chicken broth 1 can coconut milk 4 ounces rice noodles 1 tablespoon fish sauce 2 teaspoons brown sugar 3 green onions ½ cup cilantro ¼ cup basil 2 tablespoons lime juice


Instructions

1. Heat olive oil in a large pot over medium heat. 2. Season chicken and cook until golden. Remove and set aside. 3. Sauté garlic, onion, and bell pepper until tender. 4. Stir in curry paste and ginger. 5. Add broth and coconut milk. 6. Return chicken and simmer 10 minutes. 7. Add rice noodles, fish sauce, and sugar. 8. Stir in herbs and lime juice. 9. Serve immediately.

Notes

Use short-grain rice for best texture.

Attach nori just before serving to keep it crisp.
