Description
Thai coconut chicken curry is a creamy, healthy, meal-prep friendly lunch packed with lean protein and bold Thai flavor.
Ingredients
2 to 3 tablespoons coconut oil
1 medium sweet onion diced
1 pound chicken breast diced
3 cloves garlic minced
2 teaspoons ground ginger
2 teaspoons ground coriander
1 can coconut milk
1 to 1½ cups shredded carrots
1 to 3 tablespoons Thai red curry paste
1 teaspoon kosher salt
½ teaspoon black pepper
3 cups fresh spinach
1 tablespoon lime juice
1 to 2 tablespoons brown sugar optional
¼ cup fresh cilantro
Instructions
1. Sauté onion in oil over medium-high heat for 5 minutes.
2. Add chicken and cook until fully done.
3. Stir in garlic, ginger, and coriander and cook 1 minute.
4. Add coconut milk, carrots, curry paste, salt and pepper then simmer 5 minutes.
5. Add spinach and lime juice, cook until wilted.
6. Taste, adjust seasoning, garnish with cilantro and serve.
Notes
Store in airtight container up to 7 days.
Reheat gently to maintain creamy texture.
Freeze without rice for best results.
