Description
A creamy, cheesy Texas King Ranch Chicken Casserole packed with bold Tex-Mex flavor and easy preparation.
Ingredients
1 whole cooked chicken, deboned
12 corn tortillas, cut into quarters
1 can Rotel tomatoes
2 cans cream of chicken soup
1 cup sour cream
1 can chicken broth
1/2 cup chopped cilantro
2 1/2 cups shredded cheddar cheese
Instructions
1. Mix Rotel, soups, sour cream, cilantro, and 1 cup cheese.
2. Slowly add broth until thick but pourable.
3. Spread sauce on bottom of casserole dish.
4. Layer tortillas, chicken, and sauce repeatedly.
5. Finish with sauce and top with remaining cheese.
6. Bake at 350°F for 45 minutes until bubbly.
Notes
Use rotisserie chicken for faster prep.
Adjust spice level with extra Rotel or seasoning.
Let casserole rest before serving.
