Description

Taco Lasagna is a hearty baked casserole layered with tortillas, seasoned ground beef, beans, salsa, and melted cheese. It’s an easy family dinner perfect for feeding a crowd.


Ingredients

Scale

1 Tbsp vegetable oil

1 medium yellow onion chopped

1 bell pepper chopped

2 cloves garlic chopped

1 lb ground beef

Salt and black pepper

2 Tbsp chili powder

1 Tbsp flour

1 Tbsp cumin

1 can black beans drained

1 jar salsa

6 flour tortillas

8 oz cheddar cheese shredded

8 oz pepper jack cheese shredded

1 can creamed corn

Sour cream tomatoes and cilantro for serving


Instructions

1. Preheat oven to 400°F and grease a 9×13 baking dish.

2. Cook onion and bell pepper in oil until softened then add garlic.

3. Add ground beef and cook until browned then drain fat.

4. Stir in chili powder flour cumin beans salsa and water and cook briefly.

5. Layer tortillas beef mixture cheese and creamed corn in baking dish.

6. Repeat layers and finish with tortillas and cheese.

7. Bake for about 30 minutes until cheese melts and filling bubbles.

8. Let rest 10 minutes then garnish with sour cream tomatoes and cilantro.

Notes

Use corn tortillas for a stronger taco flavor.

You can substitute ground turkey or chicken.

Leftovers store well for up to 4 days in the refrigerator.
