Ingredients
2 medium sweet potatoes, peeled and grated
1 small onion, finely chopped
2 large eggs
1/2 cup all-purpose flour
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
Vegetable oil, for frying
Instructions
1. Place grated sweet potatoes in a bowl and squeeze out excess moisture
2. Add onion, eggs, flour, spices, and parsley; mix well
3. Heat oil in a skillet over medium heat
4. Scoop mixture and flatten slightly in pan
5. Cook 2–3 minutes per side until golden
6. Drain on paper towels and serve warm
