Description
Sugary zucchini bread made with cheddar cheese, warm spices, and fresh grated zucchini. Moist, flavorful, and perfect for breakfast or dinner.
Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground mustard
1/8 teaspoon cayenne pepper
1 cup shredded cheddar cheese
1/2 cup grated zucchini
1/2 cup milk
1/4 cup vegetable oil
1 large egg
Instructions
1. Preheat oven to 375°F (190°C). Grease and flour a 9×5 inch loaf pan.
2. Whisk together flour, baking powder, baking soda, salt, pepper, ground mustard, and cayenne pepper.
3. Stir in shredded cheddar cheese and grated zucchini.
4. In a separate bowl, whisk together milk, vegetable oil, and egg.
5. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
6. Pour batter into prepared loaf pan.
7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
8. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
Notes
Do not overmix the batter.
Pat zucchini lightly if overly wet.
Store tightly wrapped at room temperature up to 3 days.
Freeze slices individually for up to 3 months.
