Ingredients

2.5 lbs beef chuck roast
Salt and black pepper
2 tbsp olive oil
6 tbsp butter
5 cloves garlic
1 tsp Italian herbs
1/2 tsp red pepper flakes
1/4 cup parsley
2 lbs baby potatoes
1/2 cup beef broth
1 onion
1 cup carrots
Instructions
1. Season beef
2. Sear beef (optional)
3. Layer potatoes and beef
4. Prepare garlic butter sauce
5. Add broth and sauce
6. Cook on LOW 7-8 hours or HIGH 4-5 hours
7. Adjust seasoning and serve

Use chuck roast for best tenderness
