Delicious sheet pan pancakes with mixed berries baked fluffy and golden in one pan.
Ingredients
Scale
3 cups flour
2 tablespoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
2 1/2 cups milk
2 large eggs
8 tablespoons unsalted butter, melted
1 cup strawberries, sliced
1 cup blueberries
Instructions
1. Preheat oven to 425°F
2. Whisk dry ingredients in a bowl
3. Add wet ingredients and mix until smooth
4. Spray baking sheet and pour batter evenly
5. Add strawberries and blueberries on top
6. Bake for 15 minutes until golden brown
Notes
Do not overmix batter
Use fresh or frozen berries
Let cool slightly before slicing
