Ingredients

1 tbsp avocado oil
1/2 cup diced white onion
2 cloves garlic minced
1 can diced tomatoes with green chilies
1/2 cup tomato sauce
1 tsp paprika
1 tsp cumin
1/2 tsp sea salt
6 large eggs
2 tbsp chopped parsley
Instructions
1. Heat oil and cook onions until browned
2. Add garlic and cook until fragrant
3. Add tomatoes, sauce, spices and simmer
4. Crack eggs into sauce
5. Cover and cook until eggs are set
6. Garnish with parsley and serve
Notes
Use fresh herbs for best flavor
Adjust spice level to taste
