Description
These secretly healthy Halloween cookies are vegan, gluten-free, and packed with hidden veggies like spinach and chickpeas. A spooky, delicious treat for the whole family!
Ingredients
1.5 cups chickpeas (cooked or canned, drained)
2 medium ripe bananas
¼ cup maple syrup
½ cup peanut butter (or soy butter for nut-free)
2 tablespoons unsweetened applesauce
1 cup rolled oats (gluten-free if needed)
3 large handfuls baby spinach
1 teaspoon baking powder
Optional: chocolate chips or candy eyes
Instructions
1. Preheat oven to 350°F (176°C) and line two baking sheets with parchment paper.
2. Add all ingredients except optional ones to a food processor and blend until smooth.
3. Scoop the batter onto baking sheets using a cookie scoop.
4. Flatten and shape cookies into circles with damp hands or spoon.
5. If using chocolate chips, add them now.
6. Bake for 16–18 minutes.
7. If using candy eyes, press them into warm cookies after baking.
8. Use toothpick or spoon to make mouths. Let cool before serving.
Notes
Store in an airtight container for up to 4 days.
Freeze for up to 1 month.
Nut-free? Use soy or sunflower butter.
