Description

These pumpkin spice truffles are a healthy, no-bake Thanksgiving dessert made with pumpkin puree, oat flour, and dark chocolate. They’re dairy-free, sugar-free, and irresistibly good.


Ingredients

Scale

½ cup (122g) pumpkin purée (NOT pumpkin pie mix!)

1 ¼ tsp homemade pumpkin spice

â…› tsp salt

¾ tsp liquid stevia

¾ cup (90g) oat flour

¼ cup (54g) roughly chopped dark chocolate

Optional: flaky sea salt


Instructions

1. Line a tray with parchment paper.

2. In a bowl, mix pumpkin purée, spice, salt, and stevia.

3. Add oat flour and stir to combine into dough.

4. Roll into bite-sized balls and place on tray.

5. Chill briefly in fridge or freezer.

6. Melt dark chocolate in microwave, stirring between intervals.

7. Dip each ball into chocolate, let excess drip off.

8. Place back on tray and sprinkle sea salt.

9. Chill until chocolate hardens.

10. Store in refrigerator until ready to eat.

Notes

Use only pure pumpkin purée, not pie filling.

If mixture is sticky, oil your hands slightly.

Best enjoyed cold from the fridge.
