Description
A creamy and cozy old-fashioned potato soup made with tender potatoes, carrots, milk, and herbs. The perfect comfort food for chilly days.
Ingredients
¼ cup butter
1 large onion, chopped
6 potatoes, peeled and diced
2 carrots, diced
3 cups water
2 tablespoons chicken bouillon powder
ground black pepper to taste
3 tablespoons all-purpose flour
3 cups milk
1 tablespoon dried parsley
¼ teaspoon dried thyme
Instructions
1. Melt butter in a saucepan over medium heat. Stir in onion; cook until translucent, about 5 minutes.
2. Meanwhile, bring potatoes, carrots, water, and bouillon to a boil in another pot. Simmer until tender, about 10 minutes.
3. Add flour to onions to form a paste; cook 2 minutes.
4. Slowly stir in milk. Heat gently, stirring constantly until smooth.
5. Combine with potato mixture. Stir in parsley and thyme. Heat through and serve hot.
Notes
Substitute all-purpose flour with GF flour for a gluten-free version.
Use almond or oat milk to make it dairy-free.
Store leftovers in the fridge for up to 4 days.
Serve with crusty bread or salad.
