Make-Ahead Freezer Breakfast Burritos Recipe that’s easy, filling, and perfect for meal prep. These burritos store well and reheat quickly for busy mornings.
Ingredients
2 1/2 cups tater tot crowns
1 tablespoon extra-virgin olive oil
1 pound Italian sausage
8 scrambled eggs (with butter and salt)
1 1/2 cups shredded cheddar cheese
2 scallions, diced
8 large (10-inch) flour tortillas
Instructions
1. Preheat oven to 400°F and lightly grease a baking sheet
2. Cook tater tots according to package instructions until crispy
3. Heat olive oil in a skillet and cook sausage until browned, then drain fat
4. Prepare scrambled eggs until soft and fluffy
5. Lay out tortillas and evenly divide sausage, tater tots, eggs, cheese, and scallions
6. Fold sides and roll each burrito tightly
7. Place seam-side down on baking sheet
8. Bake for 12–15 minutes until heated through
9. Let cool completely before freezing if storing
Notes
Allow all ingredients to cool before assembling to prevent soggy burritos
Wrap tightly in foil or parchment before freezing
Store in freezer up to 3 months
Reheat in microwave, oven, or air fryer for best results
