Ingredients
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
3 tablespoons olive oil
4 cloves garlic, minced
1/3 cup parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
1. Preheat oven to 400°F (200°C) and prepare baking sheet.
2. Peel and cube sweet potatoes.
3. Toss with olive oil, garlic, parmesan, salt, pepper, and seasoning.
4. Spread in single layer on baking sheet.
5. Roast 25–30 minutes, flipping halfway.
6. Serve warm with extra parmesan.
