Description
Honey Roasted Carrots with butter, honey, and thyme. Sweet, savory, and perfectly caramelized.
Ingredients
2 lbs carrots peeled and cut into 2-inch chunks
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
3 tablespoons butter
3 tablespoons honey
1/8 teaspoon cayenne pepper
1/2 tablespoon fresh thyme or parsley
Instructions
1. Preheat oven to 425 degrees.
2. Toss carrots with olive oil, salt, and pepper. Spread on parchment-lined baking sheet.
3. Roast for 20 minutes or until fork tender.
4. Melt butter in saucepan over medium-low heat.
5. Add honey and cayenne pepper and stir for several minutes.
6. Add roasted carrots to skillet and toss to coat evenly.
7. Sprinkle with fresh thyme and season to taste.
Notes
Cut carrots evenly for uniform roasting.
Do not overcrowd baking sheet.
Add glaze after roasting to prevent burning.
