Description
A comforting homestyle chicken noodle soup packed with vegetables, tender chicken, and rich broth.
Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
1 cup sliced carrots
1 cup diced celery
2 tablespoons minced garlic
8 cups chicken broth or stock
2 pounds boneless, skinless chicken breasts or thighs
2 teaspoons black pepper
1 ½ teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon fresh thyme
2 bay leaves
6 oz egg noodles
Instructions
1. Heat oil in a large pot and sauté onion, carrots, and celery for 4 minutes
2. Add garlic and cook for 1 minute
3. Stir in broth, chicken, and seasonings, then simmer
4. Cook until chicken is tender and shred it
5. Return chicken to pot and bring to a low boil
6. Add noodles and cook 6–7 minutes
7. Serve warm with parsley
Notes
Do not overcook noodles
Use bone-in chicken for richer broth
Store without noodles for freezing
