Description
Herbed Ricotta Stuffed Chicken Rolls baked in marinara sauce with fresh herbs and creamy ricotta filling.
Ingredients
4 Boneless Skinless Chicken Breasts
1 cup Ricotta Cheese
1/3 cup Grated Parmesan Cheese
2 cups Fresh Spinach
1/4 cup Fresh Basil
1/4 cup Fresh Parsley
1 teaspoon Garlic Powder
Salt to taste
Pepper to taste
1 cup Marinara Sauce
2 tablespoons Olive Oil
1/2 teaspoon Crushed Red Pepper Flakes
Toothpicks or Kitchen Twine
Instructions
1. Preheat oven to 375°F and pound chicken evenly.
2. Mix ricotta, parmesan, spinach, herbs, garlic powder, salt and pepper.
3. Spread filling onto chicken and roll tightly.
4. Secure with toothpicks.
5. Sear rolls in olive oil 3-4 minutes per side.
6. Transfer to baking dish and pour marinara over top.
7. Bake 20-25 minutes until internal temperature reaches 165°F.
8. Rest 5 minutes, slice and serve.
Notes
Do not overfill chicken rolls.
Use fresh herbs for best flavor.
Sear before baking to lock in moisture.
