Healthy Meal Prep Zucchini Lasagna made with lean turkey, ricotta, spinach, and fresh basil for a low-carb Mediterranean-inspired comfort meal.
Ingredients
4–5 medium zucchini, sliced
1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
1 pound ground turkey
1 teaspoon oregano
1/4 teaspoon crushed fennel
1/4 teaspoon salt
22-ounce marinara sauce
17 ounces light ricotta cheese, drained
1 egg
2 cups chopped spinach
1/4 cup chopped basil
2 cups shredded mozzarella
Instructions
1. Broil zucchini slices 6 minutes per side.
2. Sauté onion and garlic.
3. Cook ground turkey and add sauce and seasoning.
4. Mix ricotta, egg, spinach, basil.
5. Layer sauce, zucchini, ricotta, mozzarella.
6. Bake 20 minutes, add cheese, bake 10 more.
7. Rest before serving.
Notes
Drain ricotta thoroughly.
Broil zucchini to prevent soggy layers.
Freeze up to 3 months.
