Spooky, cheesy, and crowd-pleasing—these Halloween Lasagna Roll-Ups are the perfect mix of fun and comfort for your next October dinner party.
Ingredients
1 pound ground beef
¼ white onion, chopped
½ teaspoon garlic powder
½ teaspoon dried oregano
1 (26 ounce) jar chunky tomato sauce
3 tablespoons white sugar
18 lasagna noodles
Cooking spray
1 (15 ounce) container ricotta cheese
1 large egg, beaten
2 tablespoons chopped fresh parsley
1 cup grated Parmesan cheese, divided
1 (12 ounce) package shredded mozzarella cheese
Instructions
1. Cook the lasagna noodles until al dente. Drain and set aside.
2. Brown ground beef with onion in a skillet. Stir in garlic powder, oregano, tomato sauce, and sugar. Simmer 10 minutes.
3. In a bowl, mix ricotta, egg, parsley, half the Parmesan, and ¾ of the mozzarella.
4. Spread cheese mixture on each noodle, then spoon meat sauce. Roll tightly.
5. Place rolls seam-down in greased baking dish. Top with sauce and remaining cheeses.
6. Bake at 375°F for 25–30 minutes until bubbly and golden. Let cool before serving.
Notes
Use black olive slices as spooky “eyeballs” for Halloween presentation.
