These chewy, buttery Halloween blondie bars are packed with leftover candy, Reese’s Pieces, oats, and chocolate chips. A fun way to use your Halloween stash and make a festive dessert everyone will love!
Ingredients
160 g (1 ⅓ cups) all-purpose flour 1 teaspoon cornstarch ½ teaspoon baking powder ½ teaspoon baking soda ½ teaspoon kosher salt 113 g (8 tbsp) unsalted butter, cold & cubed 135 g (½ cup) peanut butter, thick & creamy 160 g (¾ cup) dark brown sugar 50 g (¼ cup) granulated sugar 1 egg 1 egg yolk 1 teaspoon vanilla extract 68 g (¾ cup) old-fashioned rolled oats 100 g (½ cup) Reese’s pieces 85 g (3 oz) chocolate chips Candy eyes, for topping
Instructions
1. Preheat oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper, leaving overhang. 2. Whisk together flour, cornstarch, baking powder, baking soda, and salt. 3. In a stand mixer, beat butter and peanut butter until smooth, about 2–3 minutes. 4. Add brown and granulated sugar; beat until fluffy. 5. Add egg, egg yolk, and vanilla extract. Mix until combined. 6. Add dry ingredients; mix until just incorporated. 7. Fold in oats, Reese’s pieces, and chocolate chips. 8. Spread dough evenly into pan; press extra toppings on top. 9. Bake for 22 minutes until edges are golden. 10. Cool completely before lifting and slicing into 16 bars. 11. Top with candy eyes if desired.
Notes
Use any leftover candy you have on hand—Snickers, M&Ms, Twix, etc. Add festive sprinkles to match other holidays. Store in airtight container for 5 days or freeze up to 2 months.
