Description
A comforting Greek bean soup recipe (fasolada) made with simple Mediterranean ingredients, rich in flavor and easy to prepare.
Ingredients
3 cans Cannellini Beans (400g/15oz each)
300 ml aquafaba
3 medium tomatoes
2 medium red onions
2 medium carrots
100 ml olive oil
3 celery stalks
1 tbsp tomato paste
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
Instructions
1. Prep vegetables by chopping tomatoes, onions, carrots, and celery
2. Heat olive oil and saute onions with salt for 3 minutes
3. Add carrots and celery and cook for 5 minutes
4. Add tomatoes and tomato paste, cook for 8 minutes
5. Add beans and aquafaba to the pot
6. Add paprika and black pepper, stir well
7. Bring to a boil, then simmer for 5–7 minutes and serve
Notes
Use high-quality olive oil for authentic flavor
Mash some beans if you prefer thicker soup
Serve with crusty bread and optional parsley topping
