Ingredients

1/2 cup butter
3/4 cup white sugar
1 large egg, beaten
1 cup quick-cooking oats
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon baking powder
Instructions
1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and grease it with cooking spray.
2. Melt the butter in a microwave-safe bowl.
3. Add the sugar to the melted butter in a large mixing bowl and stir to combine.
4. Add the beaten egg and mix well.
5. Stir in the oats, flour, vanilla extract, salt, and baking powder until fully combined.
6. Drop spoonfuls of dough 3 inches apart onto the prepared baking sheet because the dough will spread.
7. Bake until the edges turn golden brown, about 8 minutes.
8. Let the cookies cool completely on the baking sheet before removing and serving.
Notes
Use quick-cooking oats for the best delicate texture.
Leave plenty of space between each cookie because the dough spreads quickly.
Cool completely before removing the cookies so they stay crisp.
Store in an airtight container with parchment between layers.
