Ingredients
4 medium sweet potatoes
4 tablespoons unsalted butter
4 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika (optional)
1 tablespoon fresh rosemary
1 tablespoon fresh parsley
Instructions
1. Preheat oven to 425°F (220°C).
2. Peel and cube sweet potatoes into 1-inch pieces.
3. Melt butter over low heat and sauté minced garlic until fragrant.
4. Toss sweet potatoes with olive oil, salt, pepper, smoked paprika, and garlic butter.
5. Spread evenly on parchment-lined baking sheet.
6. Roast 25-30 minutes, tossing halfway.
7. Sprinkle rosemary and parsley before serving.
