A rich and savory French onion soup recipe made with caramelized onions, flavorful broth, and melted Gruyere cheese.
Ingredients
4 large yellow onions
2 large sweet onions
6 tbsp butter
2 sprigs thyme
2 bay leaves
3/4 cup white wine
3 tbsp flour (optional)
4 cups beef broth
1 beef bouillon cube
1.5 cups chicken broth
1 tsp Worcestershire sauce
Salt and pepper
1 baguette
3 tbsp olive oil
6 slices Gruyere cheese
Instructions
1. Slice onions into 1/4 inch slices
2. Melt butter and add onions
3. Cook onions slowly for up to 2 hours
4. Deglaze with wine as needed
5. Add flour and cook briefly
6. Add broth, herbs, and seasoning
7. Simmer for 45 minutes
8. Toast baguette slices
9. Top bread with cheese and bake
10. Serve soup with cheesy bread on top
