Description
Freezer breakfast burritos are a quick, make-ahead breakfast packed with eggs, cheese, potatoes, and protein.
Ingredients
1 pound cooked breakfast sausage or bacon
3 cups cooked breakfast potatoes or hashbrowns
1 green pepper diced
1 yellow onion diced
8 oz cheddar
1 tablespoon butter
8 large eggs
1/2 cup cottage cheese optional
salt and pepper
8 large tortillas
Instructions
1. Cook sausage or bacon until done and set aside
2. Cook potatoes until crispy
3. Melt butter and cook pepper and onion
4. Whisk eggs with seasoning and cottage cheese
5. Cook eggs gently until soft
6. Mix all ingredients together
7. Divide into tortillas and roll tightly
8. Optional toast burritos in skillet
